I have this same HP printer. This worked for me:

Hp Officejet Pro 8600 Scan To Computer Mac
  1. download the updated drivers here: Software & driver downloads HP Officejet Pro 8600 e-All-in-One Printer - N911a | HP® Support and install them.
  2. use Image Capture, rather than any HP scanner utilities.
  3. if that doesn't work then try:
    1. go to System Preferences > Printers & Scanners > Print
    2. control-click on your printer in the column on the left
    3. select 'Reset Printing System..' and 'reset' in the dialog that follows
    4. do a factory reset on the HP. I don't remember exactly, but I think this involves unplugging the power cord for a few minutes. Check the manual.
    5. if you connect to your printer via wifi:
      1. power down everything: modem, router, computer, and printer
      2. power up each item in turn in the same order: modem, router, computer, and printer. Let each power up completely before moving on to the next
      3. enter your wifi password in your printer so it can connect to the network
    6. go back to printers & scanners and it should see your printer and download the drivers for it from Apple
    7. use Image Capture rather than any HP utilities for scanning.
